  •  
  • The creamy paste resulting from ground the roasted cacao beans. Cacao mass is also called chocolate liquor. Cocoa mass is the portion of any finished chocolate that came directly from the fermented, dried cacao seed. Cocoa mass gives chocolate flavor and color, thus there is more cocoa mass in dark chocolate and none in white chocolate. It is easily digestible because cocoa mass is stored in stomach for 1 or 2 hours.
