  • A simple function of emulsifier is mix two non-mixing substances. Eg. Oil and water cannot be mixed with each other. Emulsifier helps them to mix well. Eggs and mustard are natural emulsifier. Proteins, soy lecithin and sodium stearoyl lactylate are also emulsifier.
